The first step to looking after your combi oven is understanding what it does and how it works.

So firstly we will take you through a quick overview of how a combi oven works, and then we will go into detail on cleaning and maintenance. For the purpose of this article we won’t look at the benefits of using a combi oven, but more around how to maintain it.

How does a combi oven work?

Basically a combi oven has three functons; convection, steam and combination cooking. In convection mode the oven circulates dry heat ideal for baking bread. In steam mode the combi injects steam into the oven which allows you to poach fish. Combination mode allows you to utilise both of these functions to maintain humidity levels which gives you greater control of the moisture levels in food.

Cleaning and Maintenance

 

Daily Cleaning Tasks

1. Don’t pour liquids, grease or food scraps/debris down the drain inside your combi oven. Doing so can cause the drain to block and your oven breaking. This could meean major repairs and lots of money fixing your combi oven.

2. Always ensure that the drain screen is always in place. Without this large bits of food waste could clog the drain. This could cause your combi oven to stop working.

3. Always follow the manufacturer instructions when cleaning your oven as each oven is different and may have different instructions.

4. Avoid using any abrasive cleaning equipment to clean your combi oven because this will damage your equipment. Specifically avoid any steel wool, scourers, wire brushes or any type of metal scrapers.

5. Clean down the gaskets (rubber door seals) to keep it in good condition. Gaskets are like the tires on your car, they wear and break, especially when they come into contact with grease and oil. Use a soft cloth with water and a little bit of soap to wipe down the gaskets. Whilst you do this inspect the gaskets to ensure that they are still sealing and in good condition.

6. If there is a food probe, make sure to clean it with soapy water and then wipe with a clean cloth and then with alcohol to ensure that it is safe to insert into food. Always clean any wires and areas around the fittings. If the probe is removeable, remove it clean and wipe it down along with all fittings. When finished cleaning put it back into it’s holder.

7. Put your oven through the cleaning cycle if it has one. As always – be careful with any cleaning products as they could burn or damage your skin if you come in contact with the chemicals. Additionally – always follow the manufacturer directions/instructions.

8. Service your combi oven every 6 months.
Combi ovens use water and because of this the boiler will build up scale. Additionally water and air filters need to be changed and door seals replaced.

In a regular 6 month service your technician will:

  • Replace your water and air filters
  • Change your door gaskets if they need it
  • Descale your boiler

Other tasks that the technician may perform include;

  • Calibrating the unit
  • Inspecting the unit for corrosion
  • Inspecting the water inlet for leak tightness.

It is always good to ask your technician what he will be inspecting on his maintenance call and if there is something specific you would like the tech to check, just ask.

As always make sure that you follow the manufacturer recommendations on cleaning and maintenance as this will ensure that you are not voiding any warranty and extending the life of your equipment.
